Job Specification

 
 INSTITUTIONAL TRADE INSTRUCTOR 1 COOKING
 
 DEFINITION

 Under supervision of a supervisory officer in a correctional facility
 in the Department of Corrections trains inmates in the work activities
 in the areas of food preparation, cooking, baking, meat cutting, pot
 washing, dishwashing, and the serving of food; does related duties.

 NOTE: The examples of work for this title are for illustrative

 EXAMPLES OF WORK:

 Assists in planning the work of the assigned area and takes the lead
 in the carrying out of all phases of the work, including the provision
 of vocational training to inmates.

 Provides training to inmates in the operation of dishwashers, food
 choppers and slicers, food grinders, and other kitchen equipment;
 assists in scheduling work loads for the various machines and assigns
 inmates in order to assume the maximum use of equipment and work
 force.

 Provides training to inmates in accepted methods used in food
 preparation and food service.

 Assists in training inmates in the proper use of cleaning compounds
 and preparations to achieve sanitary results necessary in kitchen
 maintenance.

 Makes needed adjustments to food service equipment.

 Takes the approved measures required to insure the custody, safety,
 training, and well being of inmates assigned to work in the food
 service program.

 As required, drives a motor truck to deliver food to out services.

 As required, prepares requisitions for needed food service equipment
 and supplies and work orders for repairs.

 Takes the lead in the complete operation of the assigned area of work.

 Maintains records and files of inmates' time and progress, supplies
 used, quantities of linens used, and production statistics.

 Prepares factual reports.

 May be required to learn to utilize various types of electronic and/or
 manual recording and information systems used by the agency, office,
 or related units.

 REQUIREMENTS:

      EXPERIENCE:

      Two (2) years of experience in the areas of food preparation and
 processing including but not limited to cooking, baking, meat cutting,
 pot washing, dishwashing, and the serving of food in a commercial or
 institution kitchen.

      LICENSE:

      Appointee will be required to possess a driver's license valid in
 New Jersey only if the operation of a vehicle, rather than employee
 mobility, is necessary to perform the essential duties of the
 position.

 KNOWLEDGE AND ABILITIES:

 Knowledge of food service methods, techniques, and organization.

 Knowledge of the processing techniques required for varied types of
 materials during the several basic food preparation and service
 operations.

 Knowledge of the operation, maintenance, and capacity of large scale,
 institution foodservice, and related equipment.

 Ability to organize assigned supervisory work in an institution and to
 assist in developing effective work methods, plans and schedules.

 Ability to provide vocational training in kitchen operations to
 inmates as may be required.

 Ability to help in devising and maintaining realistic work and
 production schedules.

 Ability to assist in training inmates in basic commercial kitchen
 operations, including the use, adjustment, and maintenance of
 equipment.

 Ability to instruct inmates in the accepted methods used in food
 preparation.

 Ability to take the approved measures required to ensure the health,
 custody, welfare and training of assignee inmates.

 Ability to requisition, store, safeguard, issue, and monitor the
 proper use of kitchen equipment, materials and supplies.

 Ability to prepare statistical, inmate progress, and other reports of
 kitchen programs.

 Ability to maintain the essential records and files.

 Ability to learn and utilize various types of electronic and/or manual
 recording and information systems used by the agency, office, or
 related units.

 Ability to read, write, speak, understand, or communicate in English
 sufficiently to perform the duties of this position. American Sign
 Language or Braille may also be considered as acceptable forms of
 communication.
